The Greek Mountain Tea, also known as "Sideritis", has always been a traditional beverage of the Greek countryside, and has been consumed for centuries, for both its great taste and its therapeutic effects. The Mediterranean is the home of the Sideritis plant, typically referred to as the "Greek Mountain Tea", and is a member of the "Lamiaceae" aromatic plant family. It is a herbaceous perennial that grows in high altitudes and relatively barren areas, subject to frequent and extreme temperature changes. Although it provides a plethora of nutrients to humans, Sideritis requires minimum water and nutrients to grow. Greece is blessed with more than 14 indigenous subspecies of the Sideritis plant, and it is the only place in the world, where the plant has been cultivated systematically and in accordance with the now standards of organic agriculture, for decades. The harvesting of the "Sideritis" flower begins in mid-June or July, when the plant is in full bloom, and harvesting must be done by hand, in order not to injure the plants and allow them to blossom again; a full grown, healthy plant can provide blossoms for up to eight years. The tiny yellow flowers are harvested in small batches and tied in bouquets, and, after they are cleaned, they are carefully hung in sheds to dry. Drying takes approximately eight days, and the dried flower bouquets can be stored for up to three years, if they are protected from moisture. Greek Mountain Tea, unlike black tea, does not need any processing or fertilization during its cultivation or collection, a feature that makes the plant "organic" by nature.
